Quick Trail Mix

3 tbsp dry roasted soy nuts
1 tbsp dried unsulphured cranberries or cherries

Berry-Apple Ricotta Cheese

½ cup low fat ricotta cheese
½ cup strawberry halves
½ apple, sliced
1 tbsp ground flaxseed or Salba
Mix together all ingredients and enjoy

Berry-Pecan Mix

½ cup cottage cheese or ricotta cheese (1% fat)
½ cup sliced strawberries
¼ cup blueberries
2 oz low-fat plain yogurt
1 tbsp Salba (or wheat bran- a fat free option)
1 tbsp chopped pecans

Place all ingredients except the pecans in a blender and blend until smooth. Top with the chopped nuts.
