Goat Cheese, Pear & Maple Glazed Pecan Salad

I tried this recipe for the first time this past Thanksgiving and it was a hit with my whole family, there was not a bite left! The best thing about it, is that it’s really EASY! When you tell your friends though, they will think you're a gourmet chef! ENJOY!!

Candy the pecans first so they cool before they are added to the salad;

2 cups of pecan halves
1/3 cup of 100% pure maple syrup

Combine the pecans and maple syrup on a saucepan and turn stovetop to medium. Stir constantly until syrup coats the nuts and is no longer runny but sticking to the pecans instead. Place on a plate and let them cool. They will be tacky to touch so when you are ready to add them to salad pull them apart so you don't have big chunks

Salad Ingredients:

Arugula
Goat cheese
3-4 medium size pears cut into think slices
Maple glazed pecans

Dressing:

Base of White Wine Vinegar
Pure Maple Syrup
Balsamic Vinaigrette
Honey Mustard- just a touch to thicken

The dressing is a "test as you go" type of thing. You don't want the Vinaigrette to be too bitter but you want the contrast from the sweet pears, glazed pecans and goat cheese.
